Just when you think you know your vegetables they surprise you with their new colors, new flavors and new shapes. This root vegetable with white skin, green shoulders and red  flesh is great when creamed or in a stir fry or fresh in a salad. You can even pickle them.
Watermelon Radish is also known as Beauty Heart, Rose Heart, Shinrimei, Misato, Asian Red Meat, or Xin Li Mei  radish. Look for them at your farmer's market.
